CITRI-FI® IN VEGTABLES
With comparable or improved eating qualities to full fat products
CITRI-FI® 200 And 100 can be added at 0.25-1% along with additional water to a formula to bind water and oil and reduce separation.
Water: Depending on free water in the starting formula, water is added at 4 - 7 times the weight of Citri-Fi®. However, if large amounts of excess water is present, Citri-Fi® can be used to bind the excess instead of adding additional water to the formula. In the data shown below, excessive water was present so no additional water was needed.
