CAKE DONUTS WITH INCREASED MOISTNESS
With improved eating qualities as compared to a control cake donut
Citri-Fi®: Best results at 1% or less of the overall ingredient weight.
Water: Best results at 3.5 - 6* times the weight of Citri-Fi®
Shortening (or oil): Best results at 1 - 3* times the weight of Citri-Fi®

Procedure:
1. If applicable, mix Citri-Fi in with dry ingredients.
2. Add all ingredients to the mixing bowl. and mix for 1 minute on low. Scrape.
3. Mix on medium for 2 minutes.
4. Let sit 10 to 12 minutes.
5. Fryer is set at 375° F (190.5° C).
6. The cutter is set at 2.5.
7. Drop batter in and turn on the cutter.
