Gross Margin Comparison of Fibers in Meatballs

Incorporating Citri-Fi Into Your Formula

Citri-Fi and three other fibers were tested to compare yield and gross margin. Each fiber was incorporated into a standardized meatball formula. Cooked weight yields, revenues and costs of each mixture were compared. When the final gross margin of each batch was determined, Citri-Fi 200 produced the greatest profit margin and Citri-Fi 100 had the second greatest return.

Besides gross margin, there are at least four more reasons why we believe Citri-Fi is a better choice than wheat fiber:

1. Meatballs with Citri-Fi provide better palatability because they contain 2/3rd less fiber and more water to make them juicier. (One part of Citri-Fi as compared to 3.0 parts of wheat fiber and 4.0 parts of water with Citri-Fi versus 0.60 parts of water with wheat fiber).

2. Citri-Fi reduces both storage and handling costs because 2/3rd less fiber means 2/3rd less storage and handling costs.

3. Citri-Fi is all natural; it is manufactured without the use of chemicals or solvents.

4. Most wheat fiber is made from wheat straw, not the edible part of the wheat plant, likely requiring future e-number labeling.

5. Citri-Fi is non-allergenic and non-GMO.
