Procedure


1. Grind Meat through 5/32" plate.
2. Mix with seasoning and either KB 7577 (cracker meal) or Citri-Fi M40 for 1 minute.
3. Add water, and mix for 2 minutes.
4. Vacuum the meat on program 4 before stuffing.
5. Stuff into pork casings 32 to 35mm.
6. Twist sausages 4 to 1 lbs.
7. Fry Away Test - 1 sausage, each cooked in a covered frying pan (350°F) with 200 ml of water until an internal temperature of 72°C is achieved.
