Water: Depending on free water in the starting formula, water is added at 4 - 7 times the weight of Citri-Fi®. However, if large amounts of excess water or oil is present, Citri-Fi® can be used to bind the excess instead of adding additional water to the formula. In the egg roll data shown below, excessive water was present so no additional water was added.
