Dr. Brock Lundberg, Ph.D.

Developed and commercialized plant-derived food and beverage ingredients for 25+ years

Dr. Brock Lundberg is the Chief Science Officer at Fiberstar, Inc. Dr. Lundberg earned a B.S. and M.S. in Engineering at the University of Minnesota. Afterwards, he earned an Executive MBA degree from the University of St. Thomas and a Doctorate degree in Biological Systems Engineering at UW-Madison. His master’s thesis and dissertation topics included development of process technology used for creating functionality from natural plant materials, including citrus fiber, which became the foundation used to create Fiberstar’s Citri-Fi products. Brock helped develop and commercialize citrus fiber’s use in food and other applications from the start of Fiberstar. Being a veteran of citrus fiber technology, Brock continued to work at Fiberstar for over 25 years now not only as the resident expert in Fiberstar but also in the food and beverage industry.
