For instance, Citri-Fi TX keeps the meat substitutes formulation bound during food processing, handling and storage. As a result, this natural citrus fiber texturant can replace other binders such as gluten. This is essential for allergen-free meat analogue formulations. In addition to the cold binding, Citri-Fi TX creates a meatier texture simulating animal meat which consumers expect.
